Skimmed milk powder and buttermilk powder
Uelzena supplies low heat and medium heat skimmed milk powder for chocolate and confectionery products. All milk powder variations are characterized by their balanced and still pronounced milk flavor and excellent processing properties they impart to confectionery and chocolate products. High quality skimmed milk powders with finely tuned properties, including the degree of denaturation, solubility parameters, low dusting properties, particle sizes and mixing behavior, are available. The gently heated and barely denatured low heat skimmed milk powder is perfectly suited for the recombination of milk and its further processing into yoghurt, cheese and fermented dairy products. The range is completed by a sweet buttermilk powder.
Milk fat, anhydrous butter-oil, fractionated butterfat and milk fat compounds
In addition to standard butter and butterfat qualities, Uelzena can provide very special milk fat products. Using a unique fractionation technology, hard stearins are separated from soft or liquid oleins, and the individual fractions can be recombined into a wealth of products. Defined melting points, degrees of hardness as required or a certain melting behavior to meet the customer's specifications are possible upon request.
Another very special technological process, deodoration, allows the removal of both color and - if needed - taste from butter, while the reduction of cholesterol is also possible. The result: white fat for light crèmes, white or fruit filled cream candies and chocolates, and fats with a bland taste that can be mixed with nuts, brittle or flavorings.
Sweetened condensed milk, yoghurt, cream products, fat compounds
Uelzena's subsidiary company, Warmsener Spezialitäten GmbH, is specialized in producing sweetened condensed milk (also caramelized "Dulce de leche"). These products are available with various fat levels and can be optimized according to the customer's needs. The production process ensures an excellent dispersal of lactose and therefore a perfect crystallization of the product. Viscosity parameters can be adjusted as requested and addition of powders and other ingredients is possible.
The product range for the food processing industry is completed by versatile cream products and yoghurt (also lactose free) as well as fat compounds for the for the bakery and delicatessen industry.
Spray drying and milk fat processing as contract manufacturing services
Uelzena is a specialist in drying natural colours and flavours as well as vitamins, minerals, vegetable extracts, spices and additives and is known as the solution provider for difficult issues. Not only standard aqueous solutions, but also highly susceptible products, suspensions and emulsions are processed into spray-dried ingredients.
Contract processing of butter, anhydrous milk fats and cream products as well as contract fractionation and/or deodoration of milkfat complete the contract manufacturing services of Uelzena.
